Lembas Bread or Sweet Pita


As promised my dears here is my second new Middle Earth treat: Lembas Bread! This bread is so easy to make and is really just a sweeter version of pita bread. Lembas bread was given to the hobbits by the elves in order to sustain them on their journey to Mordor. While I don't expect you'll be traversing through trolls infested forests, these pastries will definitely help you on your New Year's journeys! When you slice the bread it will form a pocket that you can fill with sweet fruits, nuts or whatever floats your fancy. 


Recipe adapted from Half Baked Harvest 




Ingredients
1 cup warm water
2 tsp active dry yeast
2 1/2 - 3 cups unbleached all purpose flour
2 tsp salt
1 tbsp olive oil
3 tbsp agave

Instructions
1. In a standing mixer mix together yeast and water and allow it to stand for 5 minutes
2. Attach dough hook to mixer and stir in 2 1/2 flour, olive oil, salt and agave until a dough forms
3. Pull dough out onto a lightly floured surface and knead it into the flour until it is no longer sticky
4. Grease an oven safe bowl with olive oil or Earth Balance and place dough inside. Cover the bowl with a hot towel and allow the dough to rise for an hour
5. After the dough has risen to double in size pinch it down and roll it out until it is about 1/4 - 1/2 inch thick
6. Using a sharp knife cut the dough into squares or diagonals or whatever shape you like! If you prefer the traditional pita shape you can separate the dough into 8 round balls and roll them out that way
7. Very lightly grease a flat pan or cast iron skillet with Earth Balance and heat it to medium-high heat
8. Cook each side of the bread until a golden brown or for about 2 minutes on either side
