Low Carb & Low Calorie Alfredo Sauce


Many people don't realize the versatility of a vegan lifestyle. There are many different types of plant based diets and I can guarantee one of those choices will be right for you. There are raw-till-4, full raw, comfort, clean, high protein and even low carb plant based diets out there. In a vegan diet many great protein sources come from foods with high carbohydrate contents. Now carbs are good great! But sometimes we want to cut back on processed carbs in order to loose weight or prep for some kinda of cleanse. I can't give up fruit carbs - one because they are so damn good and two because I'm a long distance runner and I do need easily digestible food with quick acting carbohydrates. But I can and should probably work on cutting down on my processed carbs. This vegan Alfredo sauce is low carb and low calorie but it doesn't skimp on the taste. The sauce is hearty and filling especially over tofu fettuccine - another amazing low carb and calorie option for vegans.






Ingredients 
1 head of cauliflower
5 cloves of garlic diced
1 tsp olive oil
1/2 cup of sliced mushrooms (or a full cup if you REALLY like mushrooms)
2 tsp salt or to taste
1 cup almond milk

Instructions
1. Slice cauliflower into manageable chunks and then steam. I use a microwavable steam bag and it steams the cauliflower in roughly 4 minutes!
2. While the cauliflower is steaming, sauté garlic in olive oil over medium temp for 3 minutes
3. Combine steamed cauliflower, garlic, salt and almond milk in a food processor and blend until smooth

Serve warm over your favorite pasta/noodles with your veggies of choice!
