Low Carb & Low Calorie Alfredo Sauce
Many people don't realize the versatility of a vegan lifestyle. There are many different types of plant based diets and I can guarantee one of those choices will be right for you. There are raw-till-4, full raw, comfort, clean, high protein and even low carb plant based diets out there. In a vegan diet many great protein sources come from foods with high carbohydrate contents. Now carbs are
1 head of cauliflower
5 cloves of garlic diced
1 tsp olive oil
1/2 cup of sliced mushrooms (or a full cup if you REALLY like mushrooms)
2 tsp salt or to taste
1 cup almond milk
1. Slice cauliflower into manageable chunks and then steam. I use a microwavable steam bag and it steams the cauliflower in roughly 4 minutes!
2. While the cauliflower is steaming, sauté garlic in olive oil over medium temp for 3 minutes
3. Combine steamed cauliflower, garlic, salt and almond milk in a food processor and blend until smooth
Serve warm over your favorite pasta/noodles with your veggies of choice!
